Fluffy pancakes:

For 7 or 8 small pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons melted butter or oil

Instructions:

  1. In a big bowl, mix the flour, sugar, baking powder, and salt.
  2. In another bowl, mix the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients. Stir until it looks like thick batter.
  4. Heat a pan on medium heat. Grease it with a little butter or oil.
  5. Pour about 1/4 cup of batter for each pancake into the pan.
  6. When you see bubbles, flip the pancake with a spatula. Cook the other side for about 1 minute.

Serve with syrup, lemon juice or fruit.

Banana pancakes

Banana pancakes:

For 8 small pancakes

Ingredients:

  • 2 ripe bananas of medium to large size (the more ripe they are the more sweet the pancakes will be)
  • 4 medium to large eggs
  • Half a cup flour
  • 1 tablespoon olive oil or melted butter

Instructions:

  1. In a bowl, mash the banana with a fork until it’s smooth.
  2. Crack in the eggs and mix it all together.
  3. Heat a pan with a little oil or butter. The heat should be low to medium.
  4. Pour small circles of the batter into the pan.
  5. Let them cook for about 2-3 minutes until small bubbles form.
  6. Flip gently and cook the other side for 1 minute until golden.

Serve with honey, peanut butter, or berries!

Mini Blueberry fruit pancakes

Mini blueberry pancakes: For 10 mini pancakes 

Ingredients:

  • 1 cup all purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon sugar
  • Pinch of salt
  • 1 cup milk (can use whole, almond or oat milk)
  • 1 egg
  • 1/2 cup blueberries (fresh or frozen)
  • 1 tablespoon olive oil or melted butter

Instructions:

  1. In a bowl, mix the flour, baking powder, sugar and salt.
  2. Add the milk and egg, then stir until smooth.
  3. Gently stir in the blueberries.
  4. Heat a non-stick pan with a little oil or butter.
  5. Drop little spoonfuls of batter into the pan to make mini pancakes.
  6. Flip when you see bubbles. Cook the other side for 1 minute.

Serve with yogurt or syrup!
