Easy pancakes
Fluffy pancakes
Fluffy pancakes:
For 7 or 8 small pancakes
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 egg
- 2 tablespoons melted butter or oil
Instructions:
- In a big bowl, mix the flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients. Stir until it looks like thick batter.
- Heat a pan on medium heat. Grease it with a little butter or oil.
- Pour about 1/4 cup of batter for each pancake into the pan.
- When you see bubbles, flip the pancake with a spatula. Cook the other side for about 1 minute.
Serve with syrup, lemon juice or fruit.
Banana pancakes
Banana pancakes:
For 8 small pancakes
Ingredients:
- 2 ripe bananas of medium to large size (the more ripe they are the more sweet the pancakes will be)
- 4 medium to large eggs
- Half a cup flour
- 1 tablespoon olive oil or melted butter
Instructions:
- In a bowl, mash the banana with a fork until it’s smooth.
- Crack in the eggs and mix it all together.
- Heat a pan with a little oil or butter. The heat should be low to medium.
- Pour small circles of the batter into the pan.
- Let them cook for about 2-3 minutes until small bubbles form.
- Flip gently and cook the other side for 1 minute until golden.
Serve with honey, peanut butter, or berries!
Mini Blueberry fruit pancakes

Mini blueberry pancakes: For 10 mini pancakes
Ingredients:
- 1 cup all purpose flour
- 2 teaspoons baking powder
- 1 tablespoon sugar
- Pinch of salt
- 1 cup milk (can use whole, almond or oat milk)
- 1 egg
- 1/2 cup blueberries (fresh or frozen)
- 1 tablespoon olive oil or melted butter
Instructions:
- In a bowl, mix the flour, baking powder, sugar and salt.
- Add the milk and egg, then stir until smooth.
- Gently stir in the blueberries.
- Heat a non-stick pan with a little oil or butter.
- Drop little spoonfuls of batter into the pan to make mini pancakes.
- Flip when you see bubbles. Cook the other side for 1 minute.
Serve with yogurt or syrup!
