Pasta salad

Pasta salad

Simple pasta salad recipe. You can even use leftover pasta:

Ingredients:

  • Pasta
  • Italian salad dressing
  • Chopped cucumbers, tomatoes, olives (any vegetables your kids like)
  • Grated cheese of your choice e.g Parmesan
  • 1 teaspoon Italian seasoning

Instructions:

Mix all the ingredients together in a bowl

Hot dog or sausage rolls

Quick do it your self sausage rolls.

Ingredients:

  • 1 roll pastry dough (home made or store bought)
  • Hot dogs or sausages of your choice

Instructions:

  1. Roll out the dough
  2. Cut into squares, rectangles or triangles
  3. Place the hotdogs or sausages on one end of the cut dough and roll upĀ 
  4. Place on baking sheet
  5. Bake at 180 degrees celsius (356 Fahrenheit) for 15 to 20 minutes

Potatoe omelette

This is a simple potato omelette recipe:

Ingredients:

  • 3 medium sized potatoes
  • 3 large eggs
  • Salt
  • Black pepper
  • Grated Parmesan
  • Olive oil
  • Half of a large onion

Instructions:

  1. Peel and rinse the potatoes, then cut into thin slices.
  2. Chop the onions
  3. Heat olive oil in a skillet and fry the onions for 1 minute, then add the sliced potatoes and let them cook until tender
  4. In a bowl add the eggs, salt, pepper and parmesan and mix well.
  5. Add the egg mixture into skillet with the potatoe and onion
  6. Cook on medium heat for 8 to 10 minutes (or until the eggs are set).
  7. Flip the omelette over and cook the other side for 5 to 6 minutes.

This can be served at room temperature or cold.

Optional: add other ingredients of your choice. I like to add, a teaspoon of dried parsley, tuna pieces or bacon bits to the egg mixture.
